Simple Summer Salad: Twisted Chicken Caesar
This is one of our favorite summer meals, both for its 7 simple ingredients (who wants to have to stock a full pantry to make a meal anymore, right?) and for its twist on the classically yummy caesar. At appx 260 calories and packed with lean protein, even your swimsuits will thank you for serving this up!
Twisted Chicken Caesar
1 cup pear tomatos, halved
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 bag romaine hearts, chopped
2 cups sliced rotisserie skinless chicken meat
Salt and pepper to taste
Combine cider, oil and mustard in a small bowl. Stir till blended. Combine romaine, chicken and tomatoes in a bowl. Drizzle with dressing and season with s&p to taste.
