Egg Salad Made Easy
You are probably familiar with The incredible edible egg™, but do you know why it is so incredible when it comes to nutrition?
One egg has 13 essential nutrients in varying amounts – including the highest quality protein, choline, folate, iron and zinc – for only 75 calories. Eggs also play a role in weight management, muscle strength, healthy pregnancy, brain function, eye health and more.
That being said, Egg salad is the perfect summertime classic that can be year-round for those who love eggs as much as I do. Not to mention that nothing beats a quick, easy, and cheap meal. The grocery list to make egg salad adds up to only $10 with a little spare change and the directions are short and sweet.
For 4-6 servings (it’s always good to have a little extra to share with friends or to make a quick sandwich on the go) you should pick up the following:
- 4-8 eggs. Cost: $3.19 for 1 cage-free dozen

1 green or yellow onion. Cost: $ .81

1 jar of mayonnaise. You definitely won’t need the whole jar. I purchased some light mayonnaise for $3.89
- 1 bottle of sweet pickle relish. Again, you won’t need the whole jar. Cost: $2.69

Your salt and pepper shaker, this should already be in your kitchen
- First you boil the desired amount of eggs for about 20-30 minutes (to be on the safe side). I boiled 8 eggs total, the rest of the recipe follows to make enough for eggs worth.
- While the eggs are boiling, take a green or yellow onion and finely chop it to make a total of 4 tablespoons.
- Next, chill out until the eggs are done boiling. When they are ready, remove them from the stove (turning it off, of course), and drain the hot water. Remove the eggs from the pan and place them in a strainer or separate bowl and let them run under the sink using cold water.
- Grab each egg one by one and remove its shell. In the bowl that you will use to mix the egg salad, finely chop up each hardboiled egg.
- Scoop 8 tablespoons of mayonnaise.
- Add 4 teaspoons of sweet pickle relish.
- Add the 4 tablespoons of chopped onion that you prepared in step #2.
- Sprinkle a little salt and pepper. This amount is up to you. Mix it all together and you are good to go! Put the egg salad on your favorite bread and add tomato and lettuce or any other vegetables at you desire. Place any extras in a Tupperware container and the clean up is easy!
